Molasses is a sugary substance secreted by certain small insects (aphids, scale insects, etc.) that feed on the sap of trees, especially spruce, pine, oak, linden and maple.

Once this precious sugary substance is harvested, the bees bring it into the hive and transform it into honey, which gives rise to molasses honey.

It is much less sweet than other honeys because it contains less sugar.
